Paneer Frankie/ Paneer Roll

My earliest memory of Frankie – the name it is popular in Mumbai, was from my junior college days. In the heart of bandra, where I believe TIBBs started their first business, I used to enjoy our Frankie roll with my gang of girls. We were 8 of us who met for a brief period of 2 years. Money was scarce and eating a Frankie roll was definitely indulgence and rare. We bunked our practicals once a month and stole some moments to wander the streets of bandra. I still associate those days with a lot of fun moments. I tried recreating the Frankie roll many times at home and was successful many times. The recipe which I plan to share today is not the regular recipe but an adaptation and improvisation based on hubby’s likings.

For rolls
2 cups wheat flour
½ tspn baking powder
2 tspn oil
Salt to taste
For stuffing
1 cup crumbled paneer
1 onion finely chopped
2 tomatoes finely chopped
1 tspn red chilly powder
1 tspn garam masala
a pinch of dry mango powder (amchur)
1 tspn turmeric powder
Salt to taste
1 tspn Oil
1 cup chopped cabbage
1 tspn vinegar (optional)
1 tspn chat masala
½ cup chopped onion
  1)  Knead a soft dough using the flour, baking powder, salt and oil and little water. Set it aside
   2) In a pan, heat some oil, add onions and saute them till they pink
   3) Next add the tomatoes, salt, red chilly powder, garam masala, amchur
   4) Add paneer , mix well. Remove from stove and set aside
   5) Make small balls of the dough and roll them out thin and flat
   6) Roast the rolled out dough on a medium hot griddle
   7) Add butter or oil on both sides and roast well  
   8) Remove and lay it on flat surface 
   9) Place a spoonful of paneer mixture
   10) Sprinkle cabbage, chopped onions, chat masala.
   11) Add a spoonful of vinegar if you like
   12) Roll the bread and wrap it with a tissue or silver paper.
   13) Munch on.
