Spicy Couscous with chives sauce and herbed potato wedges

There is no limit to creativity when it comes to consuming couscous. It fits in or compliments any sauce or side dish that it is being served with. It essentially mixes in the flavors that you serve it. You can also add a crunchy salad along with it




Ingredients
100 gm couscous
2 tbsp coriander
1 tspn red chilli powder
1 tspn garlic powder(you can use crushed garlic)
1 tspn onion powder (optional, I used as I had some around)
1 tspn dried roasted pumpkin seeds/ sun flower seeds/ onion seeds
1 tspn black pepper
1 tspn olive oil + extra
2 tbsp sour cream/ hung curd (use good quality or home made cream curd)
1 tbsp chopped chives
1 tspn mixed dried herbs
3 medium potatoes cut in wedges
Salt to taste
Method
1) if you are using regular garlic, just gently heat it up (or let it dry for a few days in the window sill) in a microwave. Then crush it or chop it finely.
2) In a mixing bowl, add finely chopped and dried coriander, garlic, onion powder, red chilli powder, pumpkin seeds, black pepper, salt to taste. Stir well.
3) In a large bowl, take the couscous, and add about 160-70 ml of boiling hot water and the masala mixture. Cover it and let it stand for 5 min.
4) In another bowl, take the sour cream, chopped chives, salt, olive oil and beat well.
5) Mix the cut potatoes (with or without skin) with some olive oil, salt and mixed herbs and place in preheated oven for 15 min or until they are of desired color. Keep tossing them so that they are well cooked from all sides.
6) Using a fork, fluff up the couscous. Add some olive oil if you like and mix well.
Garnish with more chopped chives and serve with potato wedges and sour cream.
