Red velvet cup cakes are just as the name suggests red in color , velvetty in texture. You will love to make this again and again.
Ingredients
All purpose flour.........2 cups / 150 gm
Cocoa Powder .........1.5 tbsp / 60 gm
Butter .........1 cup/115gm
Butter milk .........1 cup/90 ml
Sugar .........1.25 cup/ 110 gm
Baking Powder .........1 tspn
Vanilla essence ..........1 tspn
White Vinegar ..........2 tspn
Baking Soda ..........1 tspn
Condensed Milk ..........3/4 cup (to compensate for eggs)
Red color ..........2 tspn liquid / 1 tspn powder
Frosting
Cream cheese .......... 100 gm
Icing sugar .......... 75 gm

Method
1) Boil about tbsp of water. Add the cocoa powder to it and stir well. Add the red color and check it. The color should be bright red at this stage else add a little more.
2) Cream the butter and sugar until it is light and fluffy. Slowly add the condensed milk in a steady stream and keep beating with a hand whisk.
3) Add the vanilla essence and mix well.
4) Now add the cocoa mixture and mix again
5) In a separate bowl, mix the flour and baking powder and mix well.
6) Add the flour mixture one spoon at a time followed by a spoon of buttermilk and fold it in the butter mixture. Repeat until all the flour and buttermilk is used
7)Preheat the oven at 180 c. Line the muffin tray with a cup cake covers
8) Just before pouring the mixture in the trays, in a cup (large) add the vinegar and baking soda and quickly stir in the cake mixture.
9) Pour this in each cup and bake it for 10-12 min or until cooked in the center.
10) In the meantime, beat the cream cheese and icing sugar till it is smooth. Taste to check for the sweetness add more if you like. Fill it in a piping bag.
11) Let the cupcakes cool down completely. Add the cheese frosting on top.

Hi, i used your recepie yesterday and my cakes totally flopped. They didnt rise properly and just spilt over the cases onto the muffin tin. I followed the recepie to the tee so what do you rhink went wrong, would love to try again.
